You can reduce popping and hissing sounds in recorded speech by using a Pop Filter. It catches the bursts of air that hit the unprotected microphone and can cause overload and distortion. Audacity I use this software for recording and editing voice audio tracks. It's user friendly and very versatile. I then run my audio through the Levelator to adjust levels and then finish my edit and produce music in Mixcraft.
